Farro, freekeh, millet, sorghum, teff, buckwheat. Grains that fed empires, sidelined by industrial agriculture, now back — and genuinely worth cooking, once you cut through the marketing.
Walk into a supermarket and the grain aisle offers wheat, rice, oats, and maybe a token bag of quinoa. Walk into a market anywhere in the world two centuries ago and the picture was completely different: dozens of grains and pseudo-grains, most of them regional, each adapted to a particular soil and climate and each supporting the cuisine that grew around it. The narrowing since then has been dramatic. A very small number of crops now supply the overwhelming majority of the world’s calories, and the ones that got squeezed out weren’t inferior — they were simply less suited to industrial-scale monoculture, mechanized harvesting, and global commodity trading.
“Ancient grains” is the marketing term that has come to describe the survivors and the returning — a loose category covering older wheat relatives like einkorn, emmer and spelt, pseudo-cereals like quinoa, amaranth and buckwheat, and long-established staples like millet, sorghum, teff and barley that never actually went anywhere in the places that eat them. The term is imprecise and does a fair amount of promotional work, which is worth naming upfront. But underneath the branding sits something real: these grains taste distinct, cook differently, carry genuine agricultural advantages, and open up a large amount of cooking that the wheat-and-rice default forecloses.
Why the narrowing happened, and why it matters
Modern wheat, rice, and maize dominate for entirely rational reasons: high yields, uniform ripening, suitability for mechanized harvest and long-distance transport, and decades of concentrated breeding investment. Older grains often have lower yields, tougher hulls requiring extra processing, less uniform ripening, and characteristics that make industrial handling awkward. In a system optimized for volume and cost, those are disqualifying traits regardless of how the grain tastes.
The costs of that consolidation have become more visible over time. International agricultural bodies including the Food and Agriculture Organization have documented the narrowing genetic base of the global food supply and its implications for resilience — uniform crops are uniformly vulnerable to the same pests, diseases, and climate stresses. Several of the sidelined grains happen to have exactly the traits that a warming, drying agricultural future is likely to need: sorghum and millets are notably drought-tolerant and grow on poor soils, teff thrives in difficult conditions, and many older wheat relatives need fewer inputs. The FAO designated an International Year of Millets in recognition of precisely this, and research agencies including the USDA Agricultural Research Service maintain active work on alternative and underutilized crops.
There’s a cultural dimension too. These grains are staples in specific places — teff in Ethiopia and Eritrea, where injera is built on it; millets and sorghum across large parts of Africa and South Asia; buckwheat in Japan, Korea, Russia and Brittany; barley across the Middle East and northern Europe. Describing them as “rediscovered” is a bit rich when hundreds of millions of people never stopped eating them. What’s actually happening is that Western markets are catching up with the rest of the world, and it’s worth framing it that way.
The grains, and what they’re actually like
The most useful thing to know is how each one behaves in a pot, because they are not interchangeable and substituting blindly produces disappointment.

Important: “ancient” does not mean gluten-free
Spelt, farro, emmer, einkorn, freekeh, kamut and barley all contain gluten and are not safe for people with coeliac disease or wheat allergy. Naturally gluten-free options include millet, sorghum, teff, buckwheat, quinoa and amaranth — but cross-contamination during processing is common, so anyone who needs to avoid gluten for medical reasons should buy certified products and follow their own healthcare professional’s guidance.
How to cook them without disappointment
Most bad experiences with these grains come from treating them all like rice. A few principles fix nearly everything.
Cook them like pasta when in doubt. For the chewy, whole-berry grains — farro, spelt, sorghum, barley — boiling in plenty of well-salted water and draining when tender is far more reliable than trying to match an exact absorption ratio, since cooking times vary considerably with how the grain was processed. Read the packet, but taste rather than trusting the clock.
Toast first. A few minutes in a dry pan or in a little oil before liquid goes in deepens flavor markedly, particularly for millet, buckwheat, and quinoa. This is a standard step in the traditions that use these grains and the one most often skipped in Western recipes.
Rinse the ones that need it. Quinoa carries a naturally bitter coating that a thorough rinse removes; skipping this is the reason many people think they dislike quinoa. Some other grains benefit from a rinse to remove dust and loose starch.
Cook in something other than water. Stock, or water with a bay leaf, a smashed garlic clove, and salt, produces a categorically better grain than plain water. These grains have real character but they still need seasoning from the start, not just at the end.
Consider soaking. Longer-cooking whole grains cook faster and more evenly after an overnight soak, which is worth doing when you remember and not worth agonizing over when you don’t.
Batch-cooking is the habit that makes these grains practical on a weeknight. Cook a large quantity, dress a portion while warm (grains absorb dressing far better warm than cold), and refrigerate the rest for salads, bowls, and soups across the week. They also freeze well in portions.
Where to encounter them properly
The fastest route to enjoying these grains is not a wellness bowl recipe but the cuisines that have been cooking them for centuries and know exactly what they’re good for.

Practical buying notes: these grains are usually cheapest in bulk bins, at Middle Eastern, South Asian, African, and East Asian grocers, rather than in the health-food aisle where the same product often carries a substantial premium for the packaging. Because whole grains retain the oil-rich germ, they go rancid faster than refined flour — buy quantities you’ll get through, store them cool and airtight, and refrigerate or freeze whole-grain flours in particular.
A measured word on the health claims
The marketing around ancient grains leans heavily on nutrition, and some of it outruns the evidence. What’s reasonably well supported is fairly modest: these are generally whole grains, and whole grains as a category are associated with favorable health outcomes in a large body of research — the Oldways Whole Grains Council and Harvard’s Nutrition Source both summarize this accessibly. Different grains do have somewhat different nutrient profiles, and variety across your diet is sensible.
What’s oversold is the implication that these grains are categorically superior to whole wheat, oats, or brown rice, or that “ancient” confers special properties. Most of the benefit comes from the grain being whole rather than from its age or rarity, and a bowl of whole oats is not nutritionally embarrassed by a bowl of amaranth. Claims that older wheat varieties are inherently better tolerated than modern wheat are not well established, and — to be explicit — they are certainly not a basis for anyone with coeliac disease to eat spelt or einkorn. As always, specific dietary questions belong with a registered dietitian or doctor rather than a food article.
The better argument for these grains was never nutritional anyway. It’s that they taste of something. Where modern refined staples have been bred toward mildness and uniformity, farro is nutty and chewy, freekeh is smoky, buckwheat is assertively earthy, teff is faintly molasses-dark — they bring flavor and texture rather than serving as neutral bulk. They also connect you to specific cuisines with centuries of accumulated knowledge about how to use them well. Buy one bag of something you’ve never cooked, find out what the tradition that grew it does with it, and cook that. It’s a cheaper and more interesting form of culinary education than almost anything else available, and it happens to support a more diverse and resilient agriculture at the same time.
